Method
Prep
- Make the bacon first while doing the following
- Ready a pot with boiling water and vinegar for the eggs
- Cut the tomatoes in half and remove the stem part
- Cut the avocado into thin slices
Cook in parallel
- Cook the tomatoes in a non-stick skillet over medium heat (15 mins)
- Make the hollandaise sauce (~10 mins)
- Separate the english muffins with a fork and toast (~5–6 mins)
- Poach the eggs (~5 mins)
Assembly
- Make 2 of these for each person
- Break a slice of bacon in half and put on an english muffin half
- Layer on 1⁄4 of the sliced avocado
- Place a poached egg on top
- Coat with hollandaise
- Add grilled tomato and cover with any leftover hollandaise
