White Chocolate Ganache


  • 100g white chocolate chips
  • 75g heavy cream
  • 20g unsalted butter


  • Add the white chocolate chips to a medium mixing bowl
  • Melt the butter in a small bowl in the microwave (go slow or it explodes)
  • Warm the cream in a small sauce pan until you see wisps of steam
  • Pour the cream over the chips and let them sit for a minute
  • Whisk until smooth
  • Add butter and whisk until incorporated
  • Refrigerate until very cold
  • Whisk again to lighten the ganache when ready to use
