Ingredients
- 100g white chocolate chips
- 75g heavy cream
- 20g unsalted butter
Method
- Add the white chocolate chips to a medium mixing bowl
- Melt the butter in a small bowl in the microwave (go slow or it explodes)
- Warm the cream in a small sauce pan until you see wisps of steam
- Pour the cream over the chips and let them sit for a minute
- Whisk until smooth
- Add butter and whisk until incorporated
- Refrigerate until very cold
- Whisk again to lighten the ganache when ready to use
