Whipped Cream


  • cold, heavy whipping cream
    • (>30% fat content, higher is better)
  • sugar
  • vanilla extract


  • The key is keeping the cream cold
  • Place a large mixing bowl and whisk in the fridge
  • When ready, take the whisk and bowl out
  • Add cream, sugar, vanilla, any other flavorings
  • Whip until it has the texture you want, here are the stages
    • liquid
    • shaving cream (very soft peaks)
    • soft peaks
    • stiff peaks
    • overwhipped (grainy)
    • butter


There are no amounts because everything is to taste and situation.

I would only use a stand mixer if making a large amount (>2 cups).
