• 1 large cucumber
  • ~2 cups greek yogurt
  • 4 cloves garlic
  • 12 lemon (juice)
  • 2 tbsp fresh dill
  • 1 tbsp fresh mint
  • salt, pepper, cayenne



  • Peel and grate cucumber into a medium or large mixing bowl
  • Sprinkle with ~12 tsp kosher salt, mix, and leave it for 10–15 mins
  • Peel the garlic
  • Gather herbs
    • Cut dill off stems
    • Slice mint into thin strips
  • Wash and cut a lemon in half

Make tzatziki sauce

  • Dump cucumber into a towel or some cheesecloth and wring out as much water as you can
  • In a ~2 qt mixing bowl
    • Add the yogurt and cucumber
    • Use a garlic press to crush the garlic and add
    • Squeeze in the lemon juice
    • Stir in herbs
    • Adjust seasoning with salt/pepper/cayenne
  • Cover in contact with plastic and refrigerate for at least a few hours
