Strawberries & Cream

Makes dessert for 2.

  • 16 oz pack of fresh strawberries
  • 12 of an 8 oz foil pack of cream cheese
  • About the same amount of greek yogurt
  • 3–4 tsp powdered sugar
  • 1 tsp vanilla extract
  • optional: Pecans or granola or anything crunchy

  • Let cream cheese come to room temperature to make it easier to mix

  • Quarter or Eighth the strawberries
  • Divide them up into two serving bowls
  • Add the cream cheese, yogurt, sugar, and flavorings to a mixing bowl
  • Smear and whisk together until combined and light
  • Taste and adjust
  • Refrigerate everything here for best results
  • Combine cream and berries and pecans or granola

To cut up the strawberries, I like cutting a cone out of the top (trying to remove any white and the stem) and then turning them upside down and quartering them. If they’re really big, you can cut each side in half horizontally as well to create eighths.

It’s easiest to divide them equally if you just put one half of each strawberry in each serving bowl as you’re cutting.
