Ingredients
- finely diced onion or shallots
- finely diced/sliced peppers
- optional: crushed garlic
- crushed tomatoes
- either/both
- salsa
- cumin, tumeric, chile powder
- salt, pepper, cayenne
- eggs

- feta (or any crumbly cheese)

Method
Prep
- Finely dice onion
- Finely dice peppers
- Crush garlic
- Prepare crushed tomatoes
- Mix spices together
- Chop parsley
Make shakshuka
- In a medium saute pan, add some oil and place over medium-high heat
- Sautee onions and peppers until onions are translucent
- Add garlic and seasonings and cook stirring for a minute or two
- Add crushed tomatoes and scrape the bottom
- Simmer sauce until veggies are tender
- Taste and adjust seasoning
- Prepare the surface for eggs
- Add an egg to each spot
- cover pan and simmer until eggs have cooked
