Roasted Delicata Squash


  • 1 medium or large delicata squash
  • olive oil
  • salt, pepper, cayenne


  • Slice off the ends
  • Split in half lengthwise
  • Use a spoon to scoop out the seeds
  • Cut each side into ~38″ slices
  • Transfer into a mixing bowl
  • Season with olive oil and salt and cayenne
  • Transfer onto a parchment lined baking sheet
  • Bake at 450°F for 12–18 minutes, until nicely caramelized
    • No need to flip
