Ingredients
- ramen noodles
- soft boiled eggs
- green onions
- baby bok choy
- mung bean sprouts
Pork Topping
- 200g ground pork or bacon
- garlic
- ginger
- 1/2 tsp sugar
- 1 tbsp chile paste
- 1 tbsp oyster sauce
- 1 tbsp mirin
Seasoning Paste
- 2 tbsp peanut butter
- 1 tbsp chile oil
- 1 tsp vinegar
- 2 tbsp soy sauce
- 1 tbsp mirin
- optionally sichuan peppercorns
Broth
- 1 cup water
- 1 tbsp chicken btb
- 1 tbsp veggie btb
- 2 cups unsweetened soy milk
Method
Prep
- Crush the garlic
- Grate the ginger
- Chop green onions into small pieces
- Cut bok choy into halves or quarters
Make the spicy pork topping
- Mix sauce
- Cook bacon
- Add garlic, ginger, green onion
- Turn heat to high
- Add sauce and cook until caramelized
Make the the seasoning paste
- Whisk together all ingredients in a small bowl
Make the Broth
- Boil some water and add btb paste in a small pot
- Mix well
- Add soy milk
- Bring to a boil
Blanch/boil
- Blanch bean sprouts and bok choy
- Boil noodles
Assemble
- In each serving bowl
- Add half of the seasoning paste
- Add half of the broth
- Stir together
- Add noodles, spread widely
- Place mung bean sprouts along the edge
- Place bok choy next to it along the edge
- Place pork topping in the middle
- Place green onions
- Place a soft boiled egg
- Garnish with crushed peanuts, sesame seeds, chile oil, etc
