Peppers Onions Potatoes Sausage


  • ~1 lb italian sausage links
  • ~1.5 lb yukon gold potatoes
  • 1 red or yellow onion
  • 3–6 peppers (poblano, etc)
  • canola oil
  • salt
  • herb de provence


  • Brown the sausage links on both sides (~3 mins per side)
  • Very roughly chop the onion and peppers and add to a giant mixing bowl
  • Cut the potatoes into 1″ wide chunks and add to the bowl
  • Cut the sausage links into ~2″ chunks and add to the bowl with all accumulated juices
  • Add enough oil to coat the veggies
  • Add ~1–2 tsp salt freshly ground pepper
  • Add ~1–2 tsp Herb de Provence
  • Use your hands to toss all the ingredients together
  • Transfer to a roasting pan and make sure the potatoes aren’t stacked on top of each other
  • Roast at 450°F for ~1 hour
