Almond Pancakes


  • 2 eggs
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 34 tsp vanilla extract
  • 1 pinch kosher salt
  • 1 cup almond flour
  • 1 tsp baking powder


Make the batter

  • All all ingredients to a medium–large mixing bowl
  • Whisk until thoroughly combined
  • Let sit for 10 minutes

Make the pancakes

  • Put a large nonstick skillet over medium heat
  • Brush or spray lightly with canola oil
  • Use a spoon to pour out as many pancakes as you can fit at a time
  • Cook on the first side until bubbles form and holes hold
  • Flip and finish cooking
  • Keep warm in a very low-temp oven while you cook the rest


This is really good with a fruit compote and/or sliced bananas.
