Ingredients
- 2 eggs
- 2 tbsp olive oil
- 2 tbsp maple syrup
- 3⁄4 tsp vanilla extract
- 1 pinch kosher salt
- 1 cup almond flour
- 1 tsp baking powder
Method
Make the batter
- All all ingredients to a medium–large mixing bowl
- Whisk until thoroughly combined
- Let sit for 10 minutes
Make the pancakes
- Put a large nonstick skillet over medium heat
- Brush or spray lightly with canola oil
- Use a spoon to pour out as many pancakes as you can fit at a time
- Cook on the first side until bubbles form and holes hold
- Flip and finish cooking
- Keep warm in a very low-temp oven while you cook the rest

This is really good with a fruit compote and/or sliced bananas.
