Ingredients
- Potatoes (russet or yukon gold)
Method
- Bring a large pot of salted water to a boil
- Wash and scrub potatoes with a green scrub pad
- Cut into uniform chunks
- Boil until fork tender, then boil a few minutes longer
- Drain in a colander
- Transfer back to the pot and add salt, pepper, cayenne, butter
- Mash until potatoes are mostly smooth, but avoid overworking them
- Stir in sour cream
- Mix in green onions
- Taste and adjust seasoning
