Mashed Potatoes


  • Potatoes (russet or yukon gold)


  • Bring a large pot of salted water to a boil
  • Wash and scrub potatoes with a green scrub pad
  • Cut into uniform chunks
  • Boil until fork tender, then boil a few minutes longer
  • Drain in a colander
  • Transfer back to the pot and add salt, pepper, cayenne, butter
  • Mash until potatoes are mostly smooth, but avoid overworking them
  • Stir in sour cream
  • Mix in green onions
  • Taste and adjust seasoning
