Steaming Method
- Fill a medium (3 L) pot with a centimeter of water
- Bring to a boil
- Place eggs in carefully with tongs
- Cover and turn to medium/high heat, make sure steaming is happening but not too violently
- Wait 91⁄2 minutes
- Cool off with running water
- Let sit in cool water for at least 10 mins
Boiling Method
- Put eggs in a medium pot
- Fill so water covers them by an inch
- Bring water to a rolling boil
- Cover and remove from the heat
- Wait 17 minutes
- Cool off with running water
Notes
The steaming method is more consistent for me than the boiling method, and you have to boil less water so it’s faster.
