Chocolate Ganache


  • 13 cup hot heavy cream
  • 4 oz dark chocolate, chopped
  • pinch of salt


  • Heat heavy cream on stove until just steaming
  • Pour hot cream over chocolate
  • Wait a minute
  • Stir until smooth
  • Heat in microwave on 50% power for 5 second intervals if it needs help


Let this cool slightly to a thicker consistency for an easier time filling macarons.

One way to screw this up is to heat the cream too much and it seizes up. If this does happen, it can be made into a chocolate sauce or hot chocolate.
