Ingredients
- 1 cup dry garbanzo beans
- 1⁄2 yellow onion
- 1⁄2 cup chopped flat leaf parsley
- 4 garlic cloves
- 1 tbsp all-purpose flour
- 2 tsp lemon juice
- 11⁄2 tsp salt
- 1 tsp cumin
- 1⁄2 tsp coriander
- 1⁄4 tsp baking soda
- 1⁄8 tsp cayenne
- oil for frying
Method
Prep (night before)
- Cover garbanzo beans with a few inches of water and soak overnight
Prep
- Finely dice onion
- Mince garlic
- Chop parsley
Make the dough
- Drain beans and transfer to a food processor
- Add rest of the dough ingredients
- Process the mixture until it’s finely ground but not a puree
- Use a spatula to make sure everything is mixing in
- Let the dough rest in the fridge for a couple of hours
- Add oil to a cast iron pan and bring to 350°F
- Use a sorbet scoop to portion the dough into balls
- Form balls into flat patties
- Fry at 350°F for ~2–3 minutes per side (until brown and crispy)
