- n Poblano peppers
- n + 1 eggs
- jack cheese
- salsa
Method
Roast the peppers
- Roast under the broiler until charred all over
- Let steam covered in a bowl for 5 minutes
- Using gloves, gently peel most of the skin off using a bowl of water to help remove it from your fingers
Make the batter
- Separate the egg whites from the yolks
- Whisk the whites until stiff
- Add a tablespoon of flour, a pinch of salt
- Add the yolks and continue whisking until incorporated
Stuff peppers
- Slice peppers and remove seeds
- Stuff with cheese and any other filling
- Roll in flour
- Coat in batter
Pan fry
- In a pan over medium heat with oil coating the bottom
- Add rellenos, cook for a few minutes
- Use two spatulas to flip
- Cook until all sides are done and the cheese is melty
