Belgian Waffles

Ingredients

Dry
90g 100%all-purpose flour
30g 33.3%cornstarch
1 tsp 5.6%*baking powder
¼ tsp 1.4%*kosher salt
Wet
200g 222.2%oat milk
1 55.6%*large egg
42g 46.7%melted butter or oil
1 tbsp 16.7%*granulated sugar
½ tsp 2.8%*vanilla extract

Method

Make the batter

  • In a medium mixing bowl, whisk together 90g flour, 30g cornstarch, 1 tsp baking powder, and ¼ tsp salt
  • In a blender pitcher, blend together 200g milk, 1 egg, 42g butter, 1 tbsp sugar, and ½ tsp vanilla
  • Transfer the flour mixture into the pitcher and blend until smooth
  • Let the batter rest for ~10 minutes while preheating

Cook waffles

  • Preheat waffle maker
  • Pour half of the batter into the waffle iron, flip and do the other side
  • Cook until golden brown and crispy (usually 4-5 minutes)
  • Serve with butter and syrup

Notes

The cornstarch helps create a crispy exterior while keeping the interior light and fluffy. If the batter seems too thick after resting, you can thin it with a little more oat milk.
